Happy Fourth of July everyone! I hope a good and safe time was had by all. We had the Hubster's parents over for pulled pork and ceviche. I have never eaten ceviche and Oh. My. Goodness. That was great stuff.
We cheated a bit by using cooked shrimp but, it was so yummy. And since the boys did all the chopping (there was a LOT of chopping) all I had to do was plonk the pork butt into the crock pot and pull it when it was done.
The fireworks at the George Bush Library were marvelous as usual although, getting out of the parking lot was a major pain. Still, all in all, a delightful 4th. So despite being highly tired from the late night, it looks like the beginning of a quiet Friday.
